Add Your Ingredients

Add your raw Chicken (750g - 1kg) into a thick-bottomed cooking vessel. Pour the entire Zimky base over it and mix thoroughly until completely coated.

Marinate

Cover the vessel with a lid and let it rest at room temperature for 30 mins. This allows the spices to deeply penetrate.

💡 For best results, do not skip the marination time.

Layer the Rice

Boil your basmati rice separately until 70% cooked. Drain the water and gently spread the hot rice evenly over the marinated base. Do not mix it.

Dum Cook

Seal the vessel tight with foil or dough. Place it on the stove and cook for 25 mins.

Rest & Serve

Turn off the heat. Very important: Let the vessel rest unopened for 15 mins. This sets the flavors and prevents the rice from breaking.

What type of vessel should I use? +
Always use a heavy-bottomed pan or handi (copper or thick aluminum is best). If your pot is thin, place a flat tawa/pan between the flame and the pot during the Dum stage.
Should I add salt or water? +
No. The Zimky base is perfectly balanced with spices, salt, and oil. Just add salt to the water when boiling your rice separately.
How do I seal the pot for Dum? +
You can cover the top with a double layer of aluminum foil and place a heavy lid on top, or use traditional wheat dough to seal the edges of the lid completely. Steam should not escape.
